Lemon Blueberry Custard Toast

Ingredients

  • 1-2 slices of sourdough

  • 3 tbsp greek yogurt

  • 1 egg

  • 1/2 tbsp vanilla protein powder (Orgain Organic)

  • 1/2 lemon juice

  • 1/2 lemon zest

  • frozen wild blueberries

  • honey

Preparation

  1. In a small bowl, combine egg, greek, vanilla protein powder, and lemon juice. Give it a good mix to make a liquid custard. 

  2. Using your fingers, press down the sourdough to create a well in the middle of the bread.

  3. Pour your liquid custard mixture into the middle of the bread and top with as many frozen wild blueberries as you desire.

  4. Cook in the air-fryer at 400°F for 6-7 minutes. 

  5. Once the custard starts to brown around the edges, remove the toast. Drizzle with honey or maple syrup. Enjoy!
